Our healthy and decadent cranberry chocolate chip cookies made with semi-sweet chocolate and whole wheat flour have a kick of natural sweetness from the addition of dried cranberries and applesauce. Ingredients
- 1 ½ cups white whole-wheat flour
- ½ cup old-fashioned rolled oats
- 1 teaspoon baking soda
- ½ tsp salt1 large egg
- ¼ cup smooth unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 ½ sticks (12 Tbsp) unsalted butter, softened
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- ½ cup semi-sweet chocolate chips
- ½ cup unsweetened dried cranberries
Instructions
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
- Add the flour and oats to a food processor and pulse until the oats are finely ground. Transfer to a medium bowl. Add the baking soda and salt and whisk to combine.
- In a small bowl, whisk together the egg, applesauce and vanilla.
- Add the butter, granulated sugar and brown sugar to a large bowl. Beat on medium-high with a mixer until the mixture is light and fluffy, about 4 minutes.
- Add the applesauce-egg mixture and beat until incorporated, scraping down the sides of the bowl as needed.
- Reduce the mixer speed to medium-low and gradually add the flour-oats mixture, mixing until just incorporated.
- Add the chocolate chips and dried cranberries and mix until evenly distributed in the batter.
- Drop batter by heaping tablespoonfuls onto the prepared baking sheets, about 2 inches apart.
- Bake until golden brown, 10 to 12 minutes, rotating the pans halfway through.
- Let the cookies partially cool on the baking sheets before transferring to racks to cool completely. Store the cookies at room temperature in airtight containers for up to 3 days.
